Its easier to make cheese on toast. Ive only made Welsh rarebit once or twice.brbrWelsh rarebitbrbrIngredientsbrmlfl oz milkbrgoz strong cheddarbrgoz plain flourbr egg yolkbr whole eggbr tsp mustard powder, or to tastebrgoz fresh white breadcrumbsbrdash of Worcestershire saucebrdash of Tabasco saucebrsalt and freshly ground black pepperbr slices thick white bread, toastedbrtomato chutney, to servebrVariationbrhandful of spinachbr tomato, slicedbrbrMethodbr. Place the milk on the stove to warm through. Do not boil.br. Grate the cheese, add to the pan with the milk and gently dissolve.br. Add the flour and cook for a minute. Remove from the heat and cool.br. Add the egg and yolk, mustard, breadcrumbs and a dash of Worcestershire and Tabasco sauce. Season and allow to cool.br. Grill the bread on both sides and place into a dish. Top with the rarebit mixture and place under the grill to brown.br. After a couple of minutes, add the spinach and sliced tomatoes. Put back under the grill.br. Remove and serve with the chutney.
